Likewise, Opihr Oriental Spiced Gin is quite spicy (the clue is in the name after all) and works well with the natural floral sweetness of the elderflower.
Bombay Sapphire, Martin Miller’s and Caorunn all work well with elderflower because the have clean, fresh tastes that don’t get overpowered by that sweetness. We thought Aviation worked well too, but more because the elderflower lifts the natural dryness we found during tasting.
